we need some good recipes, we are gonna season ours this weekend

We purchased our TT almost a month ago, and have been camping twice now.
Here are a couple of dutch oven recipes we have tried:

Smaco's

Take your dutch oven. Using a paper towel with dipped in veg.oil wipe the bottom (not too much, just enough to give it a gleam).

Place on coals (we did this with as few as 6 coals)

In the bottom of the dutch oven place a soft flour tortilla. On top of that place a handful of semi-sweet chocolate chips. On top of that place a handful of mini-marshmellows. (we tried both dark chocolate and milk chocolate chips)

Cover dutch oven with lid for 1+ minutes. Remove lid. Using tongs fold the tortilla in half (making a taco shape). You will note that the oven side of the tortilla is a golden brown.

Cover for another minute. Remove lid Remove SMACO from Dutch oven and place on paper plate to cool (THIS IS A MUST... IT COMES OUT TOOO HOT TO HANDLE).

Once shell has cooled to touch enjoy......the inside will still be moist and warm, gooy chocolate and marshmallows. Unlike SMOREs the shell will not crumble but allow you to enjoy this delicacy in a relatively clean manner.

My dh is a big breakfast kinda guy... everyone loved this
(i dont eat sausage, so I didnt try it)

Mountain Man Breakfast

* 1/2 pound bacon
* 1/2 pound sage sausage, cooked and crumbled
* 1 medium onion, diced
* 1 2-pound bag has brown potatoes, diced
* 1/2 pound extra sharp cheddar cheese, grated
* 1 dozen eggs

Preparation

Pre-heat Dutch ove, 6-9 bottom coals and 12-15 top coals. Slice bacon and onion into small pieces, and brown in the bottom of the Dutch oven until onions are clear. Stir in the has bown potatoes and cover.

Remove cover and stir occasionally to brown potatoes (15-20 minutes). Scramble the eggs (mix eggs, don't cook) in a separate container and pour the mixture over the hash browns. Cover and cook until eggs start to set (10-15 minutes). Sprinkle grated cheese over egg mixture, cover, and continue heating until eggs are completely set and cheese is melted. Slice and serve. (like a quiche)

Or....

you can scramble and cook the eggs separately and mix all ingredients together and put into a Dutch oven and bake for 15-20 minutes until cheese is melted. It is no a quiche, but moe like casserole. (we tried this version)

Servings: A bunch
Preparation time: 40 minutes

Garlic Potatoes

We had this one night when we grilled burgers and steaks. We had a bunch left over (5 of us) so we saved them and fried them with breakfast the next morning and they were wonderful. they smell wonderful when they are cooking too.

We did not use the italian seasoning. Also, we did not add additional salt since we used garlic salt..

Ingredients:

* red potatoes
* margarine (we used butter)
* garlic salt or garlic powder
* steak salt
* italian seasoning (optional)
* pam cooking spray
* olive oil

Preparation:

Dice the potatoes. I would recommend atleast 4 or 5 per person. If you are going to bake them in a camper over, spray a cookie sheet with Pam. If you are using a Dutch oven, I would use a little extra virgin olive oil.

Place the potatoes on the sheet or in the Dutch Oven. Pack them in, it won't hurt a bit. Put on dabs of butter, no set amount, enough to keep the potatoes moist during baking. Season liberally with garlic powder or garlic salt according to taste. If you love garlic like we do, we shake on the garlic powder until we think it's enough, and then put on about half as much more. Add some steak salt (and italian seasoning if you like). Bake at 350 degrees for approximately 30 minutes. About halfway through, turn the potatoes using a spoon or spatula, taste, add seasoning and/or margarine if needed, and finish baking. They are done when soft.

I wish you could have too. We also had a cherry cobbler Saturday Night (with ice cream) for the April/May Birthday people (Jeff, Josh and Craig/Meg)... while it was okay.. I am not posting it. Going to try another version to see if it is better.

We are preparing for a week long trip starting Thursday, May 18th and I am figuring out our meal plans. I am finding so many great Dutch Oven recipes.
Will post the good ones when I get back.
