Mary was nice enough to share her recipe from saturday night with me... it sure was great!
1 can (10 l/4 ounces) condensed cream of chicken soup 8 ounces sour cream l/4 cup chopped onion l/4 cup plus 3 tablespoons butter, melted, divided 1 tsp. salt 2 pounds potatoes, peeled and chopped 2 cups shredded cheddar cheese l l/2 to 2 cups stuffing mix
Slow Cooker Directions l. Combine soup, sour cream, onion, l/4 cup butter and salt in a small bowl.
2. Combine potatoes and cheese in slow cooker. Pour soup mixture into slow cooker; mix well. Sprinkle stuffing mix over potato mixture; drizzel with remaining 3 tablespoons butter. Cover; cook on LOW 8 to 10 hours or on HIGH 5 to 6 hours or until potatoes are tender.

Its so funny, if I had seen the ingredients first, I wouldnt have eaten it (I have an aversion to sour cream) .. however, it was great and I going to make it myself soon.
She will be camping with us at Jellystone... I imagine you could talk her into making it. However, her baked macaroni and cheese is the BEST as well.
